I have a sweet-tooth; however I avoid sugar as much as possible and therefore I am constantly experimenting on new recipes. Early Sunday mornings is usually my favorite time of the week to do this. I wake up before my husband and my kids, to get started on some baking so that they will wake up to the nice smell of cakes to be enjoyed after a healthy breakfast.
Today I am posting a heavenly brownie recipe and another recipe for chocolate coconut balls. Both take minutes to prepare and the coconut balls do not even require any baking.
Preparation Time: 30 mins
Cooking Time: 25 mins
- ½ cup Coconut Oil
- ½ cup Cacao powder
- 6 flax eggs (or normal eggs)
- 1 cup honey
- 2 tsp vanilla extract
- 1 cup coconut flour
- 3/4 cup coconut milk
- ½ tsp salt
- 2/3 cup nuts of your choice, walnuts or flaked almonds
- 2/3 cup gluten free and dairy free chocolate chips/ shavings
Mix the coconut oil, cacao powder, eggs, honey and vanilla. Add the coconut flour and salt. Gradually mix in the coconut milk and fold in the nuts and chocolate. Bake for 25 mins under 180oC.
If you’d like a nicer presentation and don’t mind some sugar, sprinkle some icing dust on top of the brownie cake when it’s completely cooled down.
