Shredded Curry Chicken

This recipe is convenient as can be prepared beforehand making it convenient when having guests or even for you. I especially like to prepare this recipe to use it for packed lunches combined with either some rice or boiled vegetables. It actually tastes better the day after!

Shredded Curry Chicken

Serves 4

Preparation Time 30 mins

Cooking Time 50 mins


  • 1 large chicken breast
  • 3 tbsp curry powder
  • 1 tsp turmeric
  • ½ tsp coriander
  • 2 tsp salt
  • 600ml coconut milk
  • 1 cup water
  • 2 garlic cloves minced
  • 1 onion finely chopped
  • 2 sweet potatoes cubed



Saute’ the garlic and onions in some vegetable oil. Add the coconut milk, water and chicken breasts. Mix together the curry, turmeric, coriander and salt and toss in with the chicken.  After 40 minutes pull the chicken out and shred it apart with a fork. It should pull out very easily. Add the cubed potatoes and continue cooking for another 20 minutes.
