Cacao Chestnuts

During winter, after a hard day at work followed by a busy evening of home works, cooking and house chores, I love to wind down by warming up a bowl of Cacao Chestnuts. I usually make a lot that will last me a week, so that I can spoil myself within minutes during weekdays. For those having a sweet tooth you can add 2 tbsp of sugar, however I prefer the healthier sugar-free version.

Cacao Chestnuts

Ingredients

500g dry de-shelled chestnuts

Water

3 tbsp cacao powder

2 tbsp sugar (optional)

2 cinnamon sticks

2 tsps whole cloves

1 tsp ground cinnamon

½ tsp ground cloves

The zest of 3 oranges and 2 mandarins

Method

Soak the chestnuts overnight. Remove any shells that would remain in their crevice, this task is made easier after soaking. Place the chestnuts in a deep pot and cover with water until the water is about 3 inches above the chestnuts. Toss in all the remaining ingredients and simmer gently for about 1.5 hours at low-medium heat. Do not warm up the whole bunch of chestnuts, but rather one bowl at a time if not consuming all at once
